Tuna and Pasta Curry Bake


Simple tasty recipe for the family

Ingredients

  • onion, large 1 finely chopped
  • Fresh basil 2 tbsp torn into pieces
  • Tuna in springwater 2 cans 1 can drained
  • curry powder 3 tsp
  • Thyme ½ tsp
  • Oregano 1 ½ tsp
  • Can diced tomatoes 420g
  • pasta 250g
  • tomato 2 sliced
  • Cheddar cheese 250g grated
  • Parsley for garnish

Method

  1. Preheat oven to 180°C
  2. Cook pasta, drain and set to one side.
  3. Heat 2 tbsp of oil in a wok
  4. Stir fry onion over high heat until golden brown
  5. Reduce heat to half
  6. Add 2 cans of tuna and stir to break up.
  7. Add Canned tomatoes, curry powder, basil, thyme and oregano.
  8. Simmer to reduce liquid by half
  9. Take off heat and combine with cooked pasta.
  10. Put mixture in a large casserole dish
  11. Top with cheese, tomato slices and parsley.
  12. Bake at 180°C for 20 minutes, or until cheese in browned
  13. Serve hot or cold.

Its great served cold with a salad in Summer, or hot, just by itself in Winter
