Simple tasty recipe for the family
Preheat oven to 180°C
Cook pasta, drain and set to one side.
Heat 2 tbsp of oil in a wok
Stir fry onion over high heat until golden brown
Reduce heat to half
Add 2 cans of tuna and stir to break up.
Add Canned tomatoes, curry powder, basil, thyme and oregano.
Simmer to reduce liquid by half
Take off heat and combine with cooked pasta.
Put mixture in a large casserole dish
Top with cheese, tomato slices and parsley.
Bake at 180°C for 20 minutes, or until cheese in browned
Serve hot or cold.
Its great served cold with a salad in Summer, or hot, just by itself in Winter
