My most popular request is for my pyramid dessert. Its very easy to remember the ingredient quantities as its always 1 of. It looks affective too! Great for kids parties or for evening after a bbq or any other excuse! This was given to me many years ago and Ive since improved it by appearance and have other varieties too!
Firstly, lay a large sheet of aluminium foil onto a large flat rectangular tray. You need to allow for 3 biscuits across, and 7 biscuits down in length
Mix pudding mix with one cup of milk and one cup of cream as directed on package until thick.
Add Vanilla essence to Cold coffee.
Dip biscuits into coffee and vanilla essence mixture,1 by 1 and line 3 across, attached to each other, no gaps. Until you have a line of 7 biscuits down.
Carefully spread the pudding mixture over the biscuit layout,slightly more onto the central biscuit row.
Now, carefully slide left hand under foil of first biscuit row,and the right hand under foil of the third biscuit row and bring into the centre forming a triangle shape. Use your hands to go along and lift entire first and last row into the middle. Fold the foil tightly ontop and fold ends of foil and refrigerate in coldest area for a few hours or overnight if possible.
Remove from fridge and remove aluminium foil carefully, and slowly using your forearms if need to, turn carefully back onto same flat tray,but without the foil.
Coat pyramid with chocolate frosting and sprinkle with shredded coconut.
When serving cut the pyramid into slices on a slight angle
I often put chilled pyramid into the freezer for as long as an hour to help make sure I can peel off the foil and roll gently onto a suitable tray for serving.
It looks great if you serve it with some diced strawberries and mint. Or a raspberry/berry coulis on base of plate with a tablespoon of stiffly whipped cream.
The coconut is mainly for garnish and doesnt have to be used if you prefer.
Arnotts morning coffee biscuits are THE biscuit in this recipe and because they are perfectly square, there isnt a substitute unfortunately.
