Mexican Pie


Mexican flavoured minced meat layered in a dish with tortilla bread, with added pureed vegetables, so the children can't complain about the chunks, and melted cheese on top.

Serves 6 to 8

Ingredients

Method

  1. Heat oil in large pan
  2. Finely chop onion and add to oil, cook until softened
  3. Add minced beef and break up any large lumps while browning
  4. Add pureed vegetables, seasoning mix and 500 ml tomato passata
  5. Simmer with lid on for 10 minutes
  6. Put a thin layer of the meat in a lightly greased oven dish
  7. Layer some tortilla bread
  8. Another layer of beef
  9. Continue this layering of beef and breads finishing with bread
  10. Spread the remaining tomato passata over the bread and sprinkle the cheese over the top
  11. Place in a preheated oven 200C and heat for approximately 25 minutes or until heated through
  12. Serve with a green salad
