the gorgeous fresh taste of Oysters (preferably New Zealand Bluff oysters) with the sharp tang of Lime and chilli ice, absolutely fabulous, will definately have you coming back for more. May even convert those not so keen on raw oysters. Great for parties as the lime and chilli ice keeps the oysters fresh and cool.
Stir the caster sugar into the boiling water until the sugar is dissolved.
Add the lime juice and rind, fish sauce, chilli and sweet shilli sauce.
Freeze in ice cube trays.
To serve, rinse oysters and place on a bed of rock salt or crushed ice.
Place flavoured ice cubes in a blender and process to turn into slushy ice.
Spoon over oysters and garnish with mint sprigs.
Serve with a fork.
The frozen dressing keeps the oysters cold and provides a fabulous sharp sauce as it melts.

www.aglobalalliance.com offers SBLC/BG Instruments. I tried them a few months ago and they are really good. The only issue is that they have a high service demand so you may be place on their waiting list. These guys really get the job done- if you need International Project Funding they can help with that as long as you have your Executive Summary and all the necessary paperwork
