BBQ Steak in spicy marinade


It is what it is, a spicy marinade using ollive oil, vinegar and herbs & spices

Serves 2

Ingredients

  • 4 x 300g sirloin steaks
  • 2tbs balsamic vinegar
  • 2tbs red wine vinegar
  • 2tsps brown sugar (if you don't have brown, white will do)
  • 1/2 tsp chopped dried rosemary
  • 1/2 tsp chopped dried oregano
  • 1/2 tsp chilli flakes (more if you want it hotter - or add 1/4 tsp chilli powder)
  • 1/2 tsp chopped dried sage
  • 1/2 tsp chopped dried parsley
  • Basically you can add any dried herbs or spices (add cumin if you want a bit indian/moroccan)

Method

  1. Place everything into a ziplock bag and seal.
  2. Squelch it all around ensuring the steaks are coated.
  3. Place in fridge for an hour or two - or overnight - turn it over at some stage if you remember.
  4. Cook on a hot bbq to your own personal liking.
  5. I usually sear each side for a minute on the grill, then move it to a warming rack under the hood while I burn hell out of eveything else and everyone else's steak is cooked up to well done or medium. Meanwhile my steak has sat nicely and warmed up to medium.
  6. Serve with mashed potatoes and some snowpeas, maybe bung on some grilled corn cobs if you like.
