Grease prepared pan - either 20cm ring tin or log tin. Place baking paper at bottom on tin. Re-grease and dust with flour.
Mix butter and sugar until mixutre is light and creamy. Add mashed banana, mix well, followed by beaten eggs, mix well.
Dissolve bi-carbonate soda in ½ cup milk.
Alternately add sifted flour and milk mixture to banana mixture, mixing as you add. Mixture will thicken into cake batter.
Pour cake mixture into prepared tin, and cook for 45 minutes in pre-heated oven. Test cake with skewer, if skewer is clean after inserting in cake, then remove from oven.
Cool on cooling rack. Once cooled, icing can be placed on top of cake to finish.

Sugar can be reduced to ½ cup, for the weight conscious.
Recipe suitable to be cooked as muffins. Reduce cooking time to 20 minutes, and increase oen temperature to 200C.
