Lumberjack Cake


Old time family favorite with fruit and coconut

Serves 6 to 8

Ingredients

Method

  1. Preheat overn to 180C
  2. Lightly grease a deep 20cm round tim
  3. Line base and sides and baking paper
  4. Peel, core and finely chop apples
  5. Place into a bowl
  6. Add dates and bicarb
  7. Pour over 1 cup boiling water
  8. Allow to cool
  9. Cream butter and sugar until light and fluffy
  10. Add well beaten egg and add vanilla
  11. Fold through flour and fruit mixture
  12. Pour into lined cake tin
  13. Bake for 1 hour
  14. Meanwhile combine the extra melted butter with the brown sugar, milk
  15. and shredded coconut.
  16. Spoon this over the top of cake
  17. Bake for a further 30-40 minutes or until the topping is brown and the cake
  18. is cooked through.
