Spagetti with prawns, rocket and a sundried tomato sauce
Cook spagetti until aldente
Heat a pan & toast pinenuts until golden, set aside & allow to cool
Add a splash of oil to pan add finely chopped onion & cook until transparent
Add prawns & garlic, quickly colour on all sides
Add wine & lemon zest & reduce by half
Add finely chopped sundried tomateos
Cover & simmer for 5 minutes
Season to taste & add lemon juice, stir
Add pasta, 2/3 rocket & pinenuts
Garnish with extra rocket leaves & cherry tomato florets
Drizzle with olive oil
Dont overcook prawns to avoid being rubbery.
When adding rocket serve immediately so it doesnt wilt.
