Roast Lamb with Fig stuffing

Serves 4

Method

  1. Soak figs in hot water until soft
  2. Cook onion until clear and add chopped figs and then baby spinach
  3. Stuff Lamb with figs, onion and baby spinach mixture
  4. Cook lamb for 2 hours or until cooked
  5. Cook vegetables for 1 hour or until cooked
