made from eggs and cheese and vegetables

Method

  • 1.

    Peel and slice into bite size pieces all potato and pumpkin and put in the microwave oven covered in plastic on high for 3 to 4 minutes with a small amount of water.

  • 2.

    Line a baking dish wit butter and place some of the spinach on the bottom then lay the blanched vegetables over that.

  • 3.

    Mix the eggs in and grate all the cheese and mix through the egg mixture then put the rest of the spinach through and pour over the vegetables. Sprinkle with salt and pepper to your taste.

  • 4.

    Cover with foil and bake for an hour on 180C. Then take the foil off and sprinkle some more cheese if you like cook for another 10 minutes until brown. Take out of the oven stand for about 5 minutes then serve.

It is very tasty to eat.
