Best-ever Sticky date Pudding


This is a simple to make , yummy sweet for all to enjoy.

Ingredients

  • 170 g. chopped dates
  • 1 tsp. bi carb soda
  • 170 g. castor sugar
  • 60 g. unsalted butter
  • ½ tsp. vanilla essence
  • 2 eggs
  • 170 g. self raising flour
  • Sauce:
  • ½ cup cream
  • 200 g. brown sugar
  • 130 g. unsalted butter
  • ½ teaspoon vanilla essence
  • Whipped cream to serve.

Method

  1. Preheat oven at 160C.
  2. Place 300 ml. water and 170 g. chopped dates into pot. Bring to boil. Turn off , then add 1 tsp. bi carb soda. Mix together, and set aside.
  3. Cream 170 g. caster sugar and 60 g. unsalted butter with .5 tsp. vanilla essence.
  4. Beat in 2 eggs , adding slowly.
  5. Fold in 170 g. S.R.Flour.
  6. Add date mixture (ok if it is still hot).
  7. Butter a medium sized square or round dish ( approx. 22 cm.)
  8. Pour in mixture , put in pre-heated oven , 160C.
  9. Cook for 30-40 minutes , skewer at 30 minutes to check.
  10. Sauce :
  11. Put .5 cup cream, 200 g. brown sugar, 130 g. unsalted butter, .5 tsp. vanilla essence into a pot. Bring to the boil, and simmer for 3 minutes.
  12. Pour one third of the sauce over the pudding when almost cooked , and place it back in the oven for 3 minutes. Retain remainder of sauce for serving.

Notes & Tips

Serve with whipped cream , icecream and the extra sauce !

    I tried this recipe and it's an absolute winner, everyone loved it.It was light and moist,full of flavour and not too sickly sweet.Yum

    I am going to try this recipe, Peter Evan's recipe looks delicious but uses too much sugar and butter. The quantity of ingredients in your recipe are more to my taste and I'm sure the end result will be great. Thanks for sharing
