Spicy chicken and couscous soup


This soup is delicious. I started experimenting with spices and only having a chicken in the fridge decided to make soup. As I also adore cousous I decided to add some at the end and it made it absolutely perfect! Fantastic on a cold day or if you are wanting something spicy and easy to make!

Serves 4 to 6

Ingredients

  • 1 whole chicken, divide the legs, thighs breasts and wings.
  • 1 tablespoon olive oil
  • 3 cups chicken stock
  • 2 brown onions chopped
  • 1/2 tsp gound cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp paprika
  • 1/2 tsp ground chillis (not dry chilli flakes)
  • 1 can tomatoes
  • 1 tablespoon tomato paste
  • 1 tsp sugar
  • 1 tsp cinnamon
  • 1/2 cup couscous
  • 1/2 cup chopped parsley
  • 1/4 cup chopped mint
  • Juice of half lemon

Method

  1. Heat the olive oil in large pan and brown the chicken pieces, once browned add the onion and cook until soft. Add the cumin, paprika, coriander, chilli paste and tomato paste and cook for about 5 mins. Add chicken stock and bring to the boil.
  2. Once boiling add can of tomatoes with sugar and cinnamon, salt and pepper and reduce to a simmer and cover for an hour or until the chicken starts falling of the bone.
  3. Remove the chicken and take off the bone. Return to the pan (you may at this stage need to add an extra 500ml of water) and bring again to the boil. Add the couscous stiring all the time. Reduce the heat again and add the parsley, mint and lemon juice.
  4. Then Serve!!!

Notes & Tips

If you want it extra spicy add more chilli paste! Extra lemon is also very nice
