Caesart Salad


For the real thing - Caesar salads taste OK, but ones made really well need to use only the following ingredients in this particular method. Any other way prepared leaves the entire salad 'lacking'. For the real thing do it this way.

Serves 4 to 6

Ingredients

  • - large cos lettuce - very fresh and washed / dried well then placed in the refridgerator for about one hour before mixing in with the dressing.
  • - parmesan cheese - the best oyu can reasonably buy - to be grated.
  • - home made crutons - prepared with a garlic.
  • - 3 - 4 garlic cloves
  • - 2 egg yolks
  • - tablespoon of worcestershire sauce.
  • - 1 tqblespoon of 'fresh' lemon juice
  • - 6 tablespoons of very good extra virgin olive oil.
  • - at least 60oz of bottled anchovey fillets, preferably drained.
  • Take lettuce from the fridge and arrrange the large leaves around the exterior edge of the salad bowl in an attractive way.
  • In another bowl, break the leaves into snmaller pieces and mix in the crutons and the dressing to a regular consistancy.
  • Serve in the bowl with the prepared exterior leaves.

Method

  1. Put garlic, egg yolks, lemoin juice and Worchestershire sauce into a blender and process for 30 seconds.
  2. Add anchovies, blend and drizzle in 4 tablespoons of olive oil. Blend
  3. Add half the grated Parmesan and blen with remainder of olive oil.
  4. Blend the oil in slowly to ensure the consistency of the dressing is good.
  5. Serve - presentation is all important.
  6. Plain - but just d e l i c i o u s.

Notes & Tips

Best serves with grilled or BBQ'ed lamb straps and a well backed potato and sour cream. Yummmy - enjoy !!
