  • 450g plain flour

  • 1 tea baking powder

  • 1 tea nutmeg

  • 1 tea mixed spice

  • pinch salt

  • 225g butter

  • 225g light brown sugar

  • 450g sultanas or raisins

  • 75g mixed peel - if liked

  • 2 eggs - beaten

  • 1 bottle (330g) stout


  • 1.

    In a large bowl mix together flour, baking powder, spices and salt.

  • 2.

    Rub in the butter with your fingers till breadcrumb consistency and then add the rest of the ingredients.

  • 3.

    Mix together the eggs and the stout, pour into mixture and fold in gently till just combined.

  • 4.

    Pour into a large, papered and greased tin, making sure that the paper is quite a lot higher than the tin.

  • 5.

    Bake in a 350' oven for 2 hours.

  • 6.

    Check after 1 hour, if browning too quickly, cover loosely and continue baking.
