Thai Spaghetti Salad


Coriander lovers will delight in this very different cold or hot served asian style salad. Given to me by an acquaintenance 10 years ago

Serves 6 to 8

Ingredients

  • 500 grams cooked spaghetti
  • ¼ cup fish sauce
  • ¼ cup virgin olive oil
  • 2 small red chillies (de-seeded or not, dependent on your taste)
  • 1 tablespoon of soy sauce
  • 1 tablespoon of lime or lemon juice
  • ¼ cup of chopped fresh basil
  • ¼ cup chopped fresh coriander
  • 2 tablespoons of mint
  • 2 cups of raw julienne carrots

Method

  1. Place cooked spaghetti into casserole dish
  2. Add julienne carrots
  3. Combine al liquids into separate bowl and mix well
  4. pour into casserole dish containing spaghetti
  5. place remaining herbs into spaghetti and mix well all ingredients
  6. Serve hot or cold and even better left overs tomorrow

Notes & Tips

I always de-seed my chillies as this is usually served with other dishes and over powering them on chillies is not really a good idea. You could use gluten free spaghetti
