Cook 4 potatoes until soft enough to mash. Mash with some milk but not butter as you do not want them too runny. Let the mash cool then add 1 can of salmon or tuna. Add 1 egg, pinch of salt and lemon pepper or black pepper and some parsley. Shape into patties and roll in bread crumbs (I add parmasan cheese to the crumbs) and cook in a lightly greased frypan. They can be baked or fried in some olive oil also. Very tasty and yummy. Great for kids who do not eat much fish.
When serving top with some sweet chilli sauce or natural yoghurt with a salad.

Notes & Tips
You can add finely chopped onion or shallots for extra taste. The y can also be rolled in just plain flour in you do not have bread crumbs.
Great prepared the day before and re-heated or served cold for lunch etc.
Great simple recipe & using finely diced shallots(spring onions works really well)plus roll in weetbix crushed gives that extra crust yum yum
