Roast Vegetables With Limes

A VARIATION ON TRADITIONAL ROAST VEGETABLES THAT GIVE THEM INTEREST COLOUR AND THE TANG OF FRESH LIME. THESE VEGETABLES GO WELL WITH ANY ROAST MEAT. COLD VEGETABLES MAKE AN EXCELLENT ROAST VEGETABLE SALAD.

Ingredients

  • adjust quantities to the number of people you are cooking for and personal taste. the following quantities will serve 4+ people, with plenty for tomorrow's salad.

  • olive oil to coat vegetables

  • salt & pepper to season

  • 1 large egg plant

  • 4 medium potatoes (or 8 small)

  • 2 carrots

  • 1 leek (or 2 red onions)

  • 1 average sweet potato

  • pumpkin

  • 2 medium zucchini

  • 4 vine ripened tomatoes

  • 1 large capsicum

  • 4 - 6 limes

Method

  • 1.

    HEAT OVEN TO 200 C

  • 2.

    WASH ALL VEGETABLES.

  • 3.

    CUT CARROTS, POTATOES, SWEET POTATO, PUMPKIN INTO SERVING SIZES PIECES.

  • 4.

    COMBINE WITH THICK SLICED LEEK, SALT & PEPPER IN A LARGE BOWL, COAT WITH OLIVE OIL.

  • 5.

    ADD 1/4 CUP OF OLIVE OIL TO NON STICK LARGE BAKING DISH

  • 6.

    SLICE EGG PLANT LENGTH WAYS, CUT INTO 8 EQUAL PIECES.

  • 7.

    RUB ALL SIDES OF THE EGG PLANT IN THE OIL IN THE BAKING DISH.

  • 8.

    TIP THE PREPARED BOWL OF VEGETABLES OVER THE EGGPLANT.

  • 9.

    PLACE IN THE OVEN.

  • 10.

    COMBINE HALVED TOMATOES, QUATERED ZUCCHINI, CAPSICUM CUT INTO EIGTHS AND HALVED LIMES TO THE BOWL.

  • 11.

    LIGHTLY COAT WITH OIL, SEASON.

  • 12.

    AFTER 20/30 MINUTES LIFTE EGGPLANT FROM THE BOTTOM OF THE BAKING DISH TO THE TOP. ADD THE NEW VEGETABLES AND BAKE UNTIL DONE (30 MINUTES)

  • 13.

    SERVE VEGETABLES WITH LIMES TO DIP.

Notes

KEEP AN EYE ON THE VEGETABLES AS THEY MAY NEED REARRANGING TO ENSURE EVEN COOKING. FRESH HERBS CAN BE ADDED, BASIL WORKS WELL.
