Homemade Lebanese Chicken Soup

This is a fantastic recipe for kids & big kids especially for fussy eaters & if you sick children who wont eat



  • 1.

    Wash chicken & place in a large pot

  • 2.

    Top with COLD water & 2 tablespoons salt

  • 3.

    Bring to the boil skimming off any muck for around 15min or till there is no muck

  • 4.

    Drain in a colander & rinse under HOT water

  • 5.

    Put back in pot & cover with HOT water along with another 2 tablespoons salt

  • 6.

    Add cinnamon stick

  • 7.

    Bring to the boil & then turn heat down half way

  • 8.

    Simmer till chicken is tender

  • 9.


  • 10.

    Remove the skin & take off most of the chicken breaking into small pieces

  • 11.

    Put liquid back into clean pot along with chicken bits & cinnamon stick

  • 12.

    Meanwhile melt butter in a frying pan & add garlic & pasta

  • 13.

    Toss in butter approx 5 minutes till pasta golden brown but not burnt

  • 14.

    Add to chicken

  • 15.

    Add a dash of pepper & taste for more salt

  • 16.

    Simmer for 15mins


You may add less chicken if you want more of a broth
