Corn and Bacon Dip


A fave savoury dip

Ingredients

Method

  1. Fry chopped bacon, add onion with olive oil and fry until soft. Add shallots and fry lightly. Place in large bowl.
  2. Add corn, sour cream and cheese and mix well.
  3. Slice the top from the cobb loaf (this will act as a 'lid' to your dip 'bowl'.) Pull out the soft bread from inside the loaf and pull apart or cut into chunks.
  4. Add dip mixture to the cobb loaf 'bowl', put on oven tray along with the 'lid' and chunks of bread. Bake in a moderate-to-hot oven for approximately 30 minutes or until dip is hot and bread is crunchy.
  5. Garnish the top with some additional fried and drained bacon and chopped shallots.

Notes & Tips

The bacon and corn can be swapped for spinach and cream cheese - or salmon - lots of choices for a change - you can use camenbert cheese too
