I accidentally made this recipe because I didn't realise there was a difference between prunes and dates. Plus I added in the lemon rind. Diabetic friendly - one small piece though!

Ingredients
170g prunes. halved
1/2 tspn bicarb soda
4 tspns grated lemon rind (more to taste if you like)
Preheat oven to 160 C or 140 C fan-forced. Grease 14cm x 21cm loaf pan, line base and two long sides with baking paper, extending paper 5cm above edges of pan.
Combine prunes, the water and bicarb soda in a small bowl, cover and stand for 5 mins.
Using electric mixer, beat margarine, rind and sugar in small bowl until light and fluffy. Add cottage cheese, beat until smooth. Add eggs, one at a time, beating until combined.
Stir in flour, wheat germ and prune mixture, pour into pan. Bake uncovered for approx 1 hour. Stand 10 minutes, then turn onto wire rack to cool.
