Wholemeal Prune & Lemon Loaf


I accidentally made this recipe because I didn't realise there was a difference between prunes and dates. Plus I added in the lemon rind. Diabetic friendly - one small piece though!

Serves 6

Ingredients

  • 170g prunes. halved
  • 1/2 tspn bicarb soda
  • 4 tspns grated lemon rind (more to taste if you like)
  • 200g low fat cottage cheese
  • 2 cups wholemeal self raising flour
  • 2 tblspns boiling water
  • 60g low-fat dairy-free margarine
  • 150g firmly packed brown sugar
  • 2 eggs
  • 2 tblspns wheatgerm

Method

  1. Preheat oven to 160 C or 140 C fan-forced. Grease 14cm x 21cm loaf pan, line base and two long sides with baking paper, extending paper 5cm above edges of pan.
  2. Combine prunes, the water and bicarb soda in a small bowl, cover and stand for 5 mins.
  3. Using electric mixer, beat margarine, rind and sugar in small bowl until light and fluffy. Add cottage cheese, beat until smooth. Add eggs, one at a time, beating until combined.
  4. Stir in flour, wheat germ and prune mixture, pour into pan. Bake uncovered for approx 1 hour. Stand 10 minutes, then turn onto wire rack to cool.

Notes & Tips

You can also heat this through and serve with ice-cream.
