A great fresh produce recipe of beetroot, carrot, coriander and garlic with a very simple dressing.
CARROT and BEETROOT SALAD
4 Carrots, peeled and shredded
2 Beetroot, peeled and shredded
1 Garlic Cloves, crushed
1/3 cup coarsely chopped Coriander
1/3 cup Rice Vinegar
Salt & Pepper
1. Combine the carrots, beetroot, garlic and coriander in a bowl.
2. Add rice vinegar and toss to mix well.
3. Cover and refrigerate for at least 1 hour to allow the flavours to marry.
4. Serve on platter and salt and pepper to taste.
Preparation 10 minutes, Chilling 60 minutes
It so good for the health concious and is always better if prepared in advance.
Time poor - make a batch and it will last a number of days.
