Beetroot and Carrot Salad


A great fresh produce recipe of beetroot, carrot, coriander and garlic with a very simple dressing.

Serves 4

Ingredients

Method

  1. CARROT and BEETROOT SALAD
  2. INGREDIENTS
  3. 4 Carrots, peeled and shredded
  4. 2 Beetroot, peeled and shredded
  5. 1 Garlic Cloves, crushed
  6. 1/3 cup coarsely chopped Coriander
  7. 1/3 cup Rice Vinegar
  8. Salt & Pepper
  9. METHOD
  10. 10 Combine the carrots, beetroot, garlic and coriander in a bowl.
  11. 20 Add rice vinegar and toss to mix well.
  12. 30 Cover and refrigerate for at least 1 hour to allow the flavours to marry.
  13. 40 Serve on platter and salt and pepper to taste.
  14. Serves 6
  15. Preparation 10 minutes, Chilling 60 minutes

Notes & Tips

It so good for the health concious and is always better if prepared in advance. Time poor - make a batch and it will last a number of days.
