Vegan blueberry muffins


Delicious blueberry muffins...vegan style!

Serves 8

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 cup soy milk
  • 1/4 cup oil
  • 1 cup frozen blueberries

Method

  1. Preheat oven to 180C (fan forced oven).
  2. Place baking cups in a muffin pan.
  3. Combine flour, sugar, salt, and baking powder together in a mixing bowl. Add soy milk and oil and mix well.
  4. Fold in blueberries.
  5. Pour into baking cups and bake for 25-30 minutes.
