Mix the eggs, oil, sour cream, vanilla essence, syrup and sugar together in a large bowl until just combined.
Stir in the grated carrots.
Mix bicarbonate of soda, cinnamon and sifted flour together in another bowl. make a well in the middle and add the wet ingredients and fold until combined.
Pour into greased 20 cm round pan and bake in oven preheated at 175 deg for about 1 hr 15 min. Test with skewer.
