Carrot cake


Carrot cake

Very moist and dense, making it ideal for decorating, which is a little passion of mine.

Serves 12

Ingredients

  • 3 eggs
  • 2/3 cup of oil
  • 2/3 cup of sour cream (low fat okay)
  • 1 tsp vanilla essence
  • 1/3 cup of golden syrup
  • 1/2 cup of brown sugar
  • 2 cups of densely packed grated carrots
  • 1 cup self-raising flour
  • 2/3 cup of plain flour
  • 1/2 tsp ground cinnamon
  • 1 tsp of bicarbonate of soda
  • 1/2 cup of coarsely chopped walnuts

Method

  1. Mix the eggs, oil, sour cream, vanilla essence, syrup and sugar together in a large bowl until just combined.
  2. Stir in the grated carrots.
  3. Mix bicarbonate of soda, cinnamon and sifted flour together in another bowl. make a well in the middle and add the wet ingredients and fold until combined.
  4. Pour into greased 20 cm round pan and bake in oven preheated at 175 deg for about 1 hr 15 min. Test with skewer.
