Pasta Cacciatore


Pasta Cacciatore

A hearty pasta sauce

Ingredients

  • 2 tbs olive oil
  • 2 cloves of garlic
  • 1 red onion, finely sliced
  • ½ cacciatore sausage, peeled, sliced and cut into think matchsticks
  • 1 red capsicum cut into thick matchsticks
  • 2 tsps of salted capers, rinsed
  • 600g tomato passata
  • salt and pepper
  • 500g pasta of your choice

Method

  1. Heat oil in saucepan on medium heat and add garlic. Then add cacciatore and cook for 2 minutes. Add onion and cook until soft.
  2. Add capsicum and capers and cook until capsicum is soft. Add passata and simmer on a very low heat for 10 to 15 minutes, or until the oil and the sauce start to separate.
  3. Cook pasta until al dente, the stir through the sauce. Serve with freshly grated parmesan, and a green salad.
  4. Serves four.
