Rice & Potato patties


A quick, filling and tasty vegetarian lunch or dinner option.

Serves 3 to 4

Ingredients

Method

  1. Boil and drain the rice
  2. Grate the potatoes
  3. Combine all ingredients except breadcrumbs in a large bowl
  4. Shape into palm sized patties
  5. Coat with breadcrumbs
  6. Shallow fry in hot oil until cooked through
  7. Drain on paper towel
  8. Serve with sweet chilli sauce, and steamed vegies or salad
