Ham, Eggplant and Blue Cheese Pizza

A pizza combining smokey roasted eggplant with rich blue cheese pizza.

Serves 2

Ingredients

  • 1 medium pizza base (bought or home-made)
  • 100 ml tomato pesto (or pizza tomato sauce)
  • 10 slices ham
  • 1 large roasted eggplant
  • 150 g mozzarella (grated)
  • 120 g blue cheese (of choice, eg. blue castellofor a mild flavour or gorgonzola if a stronger flavour is preferred)

Method

  1. Fry or roast 1 cm slices of eggplant until soft
  2. Heat oven to 220 degrees C
  3. Roll pizza base and lay on pizza tray
  4. Spread pesto or sauce on pizza base
  5. Placeham slices over pizza, followed by eggplant slices
  6. Sprinkle grated mozzarella, followed by crumbled blue cheese
  7. Bake in oven for 15-20 minutes

Eggplant may be roasted in oven or fryed in oil on top of stove
