Currant loaf

A moist, easy to make recipe for time conscious cooks.
serve sliced, thinly spread with butter


  • 1 cup currants ( or sultanas)

  • 1 cup cold strained tea

  • 1 cup caster sugar

  • 2 cups self raising flour


  • 1.

    Combine tea, currants and sugar. stand for 1 hour.

  • 2.

    Add sifted flour, mix well.

  • 3.

    Pour into a greased loaf tin.

  • 4.

    Bake 190c 1 hour
