Taarnia's Italian Almond Bites

A super fast and simple biscuit/biscotti made from a traditional Italian recipe - healthy too!

Serves 40

Ingredients

Method

  1. preheat oven (fan forced) to approx. 170 degrees Celsius
  2. Line two scone trays with baking paper
  3. mix all ingredients together in a bowl (except for extra egg and blanched almonds)
  4. keep mixing to bind ingredients together and to become moist
  5. use a teaspoon to scoop a good amount of mixture and roll into balls
  6. place each one a your tray approximately 1.5cm apart
  7. gently depress each ball with a blanched almond on top and slightly squashing the ball down (don't over flatten)
  8. when all rolled, pressed and almond dressed
  9. brush with beaten egg for the egg wash
  10. cook for approximately 15-20 minutes or until golden
  11. Store in an air tight container
  12. makes approximately 40 biscotti's (just like mumma used to make! :)

Notes & Tips

Keep checking your biscotti's after the 10 minute mark. You do not want these biscuits to burn or cook too quick. However you want them a nice golden colour on top and this will lead to a cruchy outside with a juicy moist inside.
