tasty chicken curry island style. Variation on goat curry.
Chop chicken into eight pieces, add all ingredients except coconut cream and potatoes, and 1/2 of the curry powder. marinate 24hrs.
Heat 2 tablespoons vegetable oil in heavy pot. add remaining 11/2 tablesp. curry powder. FRY until brown.
add chicken and marinade ingredients. stir over high heat briefly, then lower heat and simmer 1/2 hr.
after first 1/2hr, add coconut cream and potatoes. simmer further 1hr until potatoes tender.
Serve with steamed rice.
