Raro Chicken Curry


tasty chicken curry island style. Variation on goat curry.

Serves 4 to 6

Ingredients

  • 1½ kg chicken
  • One onion (chopped roughly)
  • One green pepper (chopped roughly)
  • 1cm ginger (finely chopped )
  • 3 cloves garlic (finely chopped)
  • 4 small red chillies (rough chopped)
  • 5 allspice berries (smashed)
  • 2 tomatoes (rough chopped)
  • 1 lemon (juice)
  • thyme small bunch.
  • 3 table spoons curry powder
  • 1/2 cup coconut cream
  • 8 small potatoes (washed unpeeled)
  • Vegetable oil ( 2 table spoons)

Method

  1. chop chicken into eight pieces, add all ingredients except coconut cream and potatoes, and 1/2 of the curry powder. marinate 24hrs.
  2. heat 2 tablespoons vegetable oil in heavy pot. add remaining 11/2 tablesp. curry powder. FRY until brown.
  3. add chicken and marinade ingredients. stir over high heat briefly, then lower heat and simmer 1/2 hr.
  4. after first 1/2hr, add coconut cream and potatoes. simmer further 1hr until potatoes tender.
  5. serve with steamed rice.
