Crisp whole-fried flounder with pickled vegetables and horseradish sauce


Serves 1 to 2

Ingredients

  • 1 whole flounder
  • 1 cup semolina
  • 2 teaspoons salt
  • 2 teaspoons peppers
  • 2 egg whites
  • mustard greens to garnish (baby shiso & mustard cress)

Horse radish sauce

Method

  1. Combine semolina and seasoning.
  2. Dip flounder in egg whites and then coat with semolina mix.
  3. Heat deep fryer to about 180°C, place in oil and cook for around 10 to 15 minutes, depending on the size of the fish.

Pickled vegetables (you can buy or make your own)

  1. Blanch vegetables, leaving them still crisp, then place in a jar with any mixture of vinegars, spices, herbs, salt, sugar and pepper depending on your taste.

Horse radish sauce

  1. Mix all ingredients together.

To serve

  1. Place fish on plate and garnish with mustard greens. Serve horseradish sauce and vegetables on the inside.
