Combine semolina and seasoning.
Dip flounder in egg whites and then coat with semolina mix.
Heat deep fryer to about 180°C, place in oil and cook for around 10 to 15 minutes, depending on the size of the fish.
Pickled vegetables (you can buy or make your own):
Blanch vegetables, leaving them still crisp, then place in a jar with any mixture of vinegars, spices, herbs, salt, sugar and pepper depending on your taste.
Horse radish sauce:
Mix all ingredients together.
Place fish on plate and garnish with mustard greens. Serve horseradish sauce and vegetables on the inside.
