Mandys Satay Chicken

A delicious, quick and easy chicken dish that takes no time to cook


  • 1 cup Crunchy Peanut Butter

  • Sliced Raw Chicken Breast (2 or 3) the more the better

  • 2 - 3 Chopped red Chillis - I use the small ones

  • 1 Large Onion chopped

  • 1 Clove Garlic - squished

  • 1 Cup Coconut Cream - I sometimes use a bit more for added juice

  • 1 TBS Sugar (white)

  • 2 TBS Lemon Juice (fresh)

  • 2 TBS Tamari (or any light soy sauce)

  • 1 Bunch chopped Coriander (or more to suit)


  • 1.

    Heat about 102 tbs oil in pan and fry onion and garlic for about 3-5 mins.

  • 2.

    Add chicken and brown slightly

  • 3.

    Add everything else and simmer 10-15 mins.

  • 4.

    Thats it!!

  • 5.

    Serve with rice


Always add more coriander or chilli to suit your taste.
Kids will love this meal and it's filling. The more chicken you use the better as no-one likes to get just a few pieces of chicken on their plate.
Serves 2 nicely
