Mandys Satay Chicken

A delicious, quick and easy chicken dish that takes no time to cook

Ingredients

  • 1 cup crunchy peanut butter

  • sliced raw chicken breast (2 or 3) the more the better

  • 2 - 3 chopped red chillis - i use the small ones

  • 1 large onion chopped

  • 1 clove garlic - squished

  • 1 cup coconut cream - i sometimes use a bit more for added juice

  • 1 tbs sugar (white)

  • 2 tbs lemon juice (fresh)

  • 2 tbs tamari (or any light soy sauce)

  • 1 bunch chopped coriander (or more to suit)

Method

  • 1.

    Heat about 102 tbs oil in pan and fry onion and garlic for about 3-5 mins.

  • 2.

    Add chicken and brown slightly

  • 3.

    Add everything else and simmer 10-15 mins.

  • 4.

    Thats it!!

  • 5.

    Serve with rice

Notes

Always add more coriander or chilli to suit your taste.
Kids will love this meal and it's filling. The more chicken you use the better as no-one likes to get just a few pieces of chicken on their plate.
Serves 2 nicely
