Mandys Satay Chicken


A delicious, quick and easy chicken dish that takes no time to cook

Ingredients

  • 1 cup crunchy peanut butter
  • Sliced raw chicken breast (2 or 3) the more the better
  • 2 - 3 chopped red chillis - i use the small ones
  • 1 large onion chopped
  • 1 clove garlic - squished
  • 1 cup coconut cream - i sometimes use a bit more for added juice
  • 1 tbs sugar (white)
  • 2 tbs lemon juice (fresh)
  • 2 tbs tamari (or any light soy sauce)
  • 1 bunch chopped coriander (or more to suit)

Method

  1. Heat about 102 tbs oil in pan and fry onion and garlic for about 3-5 mins.
  2. Add chicken and brown slightly
  3. Add everything else and simmer 10-15 mins.
  4. Thats it!!
  5. Serve with rice

Notes & Tips

Always add more coriander or chilli to suit your taste. Kids will love this meal and it's filling. The more chicken you use the better as no-one likes to get just a few pieces of chicken on their plate. Serves 2 nicely
