Silken Chicken (with thanks to Madhur Jaffrey)


Chicken Breasts quickly cooked in a hot oven in a spicy creamy sauce

Serves 4

Ingredients

  • 4 boneless and skinned chicken breasts
  • 1/2 tap salt
  • 2 tbsp lemon juice
  • 4 tbsp heavy cream
  • 1/2 tsp garam masala
  • 1/4 tsp cayenne pepper
  • 1 clove garlic -- peeled and smashed
  • 1/2 tsp ginger -- peeled grated
  • 1/4 tsp ground roasted cumin seeds
  • Generous squeeze lemon juice
  • Pinch salt
  • Pinch ground black pepper
  • Pinch ground roasted cumin seeds
  • pinch cayenne
  • pinch amchhoor powder (opional}

Method

  1. Preheat oven to 230 degrees or highest setting
  2. Cut 3 diagonal slits across the tops of each chicken breast.
  3. Prick the chicken pieces with sharp point of small knife.Rub the chicken with salt
  4. and lemon juice. Leave for 15 mjinutes.
  5. Meanwhile combine the cream. garam marsala, cayenne,garlic,ginger and
  6. cumin in a bowl. Pour over chicken in a plastic bag and leave to
  7. marinate for 12 hours or over night
  8. Lay chicken pieces in a shallow non stick pan.
  9. On top of each piece,sprinkle lemon juice,salt,black pepper,garam masala,and cumin.
  10. Place pan on top third of oven and bake for 12 -15 minutes
  11. Serve with fluffy basmati rice and cucumber yoghurt on the side
