Quick and tasty finger food for parties which can be kept low in fat content
Saute onions in olive oil until soft
Add drained spinach, cheese and ricotta and egg and mix well
Season with salt and pepper.
Cut each sheet into 9 squares
Add about a tablespoon of filling onto each square and fold diagonally to form a triangle.
Use the edge of a fork to seal the sides of the triangle
Place the triangles onto a baking tray and brush the upper surface of the triangles with beaten egg
Bake each batch at 200 degrees for about 10-15 min until golden and puffed.
