Curried Prawns & Rice

A simple dish that I have been cooking since first moving out of home- quick and delicious!

Ingredients

  • 1 kg of prawns shelled & deveined

  • 50g butter

  • 1-2 tablespoons of curry powder more or less dependant on how hot you like it

  • 1 large onion

  • 1 green capsicum

  • 1 medium tomato

  • 4 tablespoons flour

  • salt/pepper to taste

  • 1 1/2 cups of water

  • 1 cup milk

  • 2 chicken stockcubes

  • 1 tablespoon lemon juice

  • 1 teaspoon raw sugar

Method

  • 1.

    Melt butter, add curry powder, chopped capsicum & onion

  • 2.

    Saute for two to three minutes

  • 3.

    Chop tomato and add to pan cooking for a further two minutes

  • 4.

    Stir in the flour, salt & pepper cooking for one minute

  • 5.

    Gradually add the water and milk and then crumbled stock cubes

  • 6.

    Continue stirring until sauce boils and thickens

  • 7.

    Reduce heat add the sugar and lemon juice and allow to simmer for around 20 minutes, stirring occasionally

  • 8.

    Add the prawns near to serving just enough to heat through

  • 9.

    Serve with steamed rice

Notes

When adding the flour the mixture will thicken very quickly so don't delay in adding the water or milk or it will turn lumpy

what heat do the prawns need to be cooked at, I added them at the last part that asks to simmer for 20minutes

i am going to give it a go, next wednesday, 13th febuary 2013, curried prawns using this recipe, it sounds great.
