Garlicy chilli chicken dish. Quick and economical to make. This dish was prepared by my granddaughter and I using the only ingredients I had left in the fridge and cupboard. Meal was enjoyed by all.
Roughly chop garlic, chilli and ginger.
Add to oil in frying pan.
Add chicken thigh fillets.
Add diced eggplant and onion.
Cook on medium heat adding a two tablespoons of water every 5 minutes - this stops the chicken from drying out.
When brown cover the pan with a lid and cook till chicken and eggplant is cooked through - approx ten to fifteen minutes depending on cut of chicken.
Soak noodles in boiling water for five minutes. Drain.
Just before serving add noodles to chicken, stir and serve onto a plate.
Instead of using chickent thigh fillets, use wings chopped into three, diced breasts or drumsticks.
Add vegies like capiscum, beans and carrots for extra colour and bite.
Add a tablespoon of cream just before serving for a creamy sauce.
