A yummy and tasty homemade pizza that was tweaked to suit my family's tastes.
Preheat oven to 220°C. Lightly grease two flat baking trays.
Line a roasting pan with baking paper.
Combine pumpkin and chorizo in pan. Drizzle with oil and season with pepper. Roast for 15 to 20 minutes or until light golden. Allow to cool for 10 minutes.
Place pita bread on the trays (2 on each) and spread each with a tablespoon of tomato paste
Top pizza bases with pumpkin mixture, walnuts and mozzarella. Drizzle with oil mixture from roasting pan. Bake for 15 to 20 minutes or until the pitas are crisp.
Top each pizza with a handful of baby rocket, drizzle with vinegar and serve.
