A simple and delicious vegetable recipe that can easily be cooked on the barbie. Great on its own and also goes well with barbecued steak or chicken, or even snags.
Grill the eggplant, zucchini, mushrooms and capsicum on the barbecue. Once cooked, divide evenly onto four plates - arrange as stacks. Top with olives, feta, a dollop of pesto and a drizzle of olive oil.
