Rustic Curry Puffs with Sweet'n'Sour Chilli Cucumber Sauce

Quick and simple recipe using easy to find ingredients

Serves 24

Ingredients

  • curry puffs
  • 1 tbs olive oil
  • 2 brown onions, finely chopped
  • 4 cloves garlic, minced
  • 4 tsp fresh ginger, finely grated
  • 500g beef mince
  • 2 medium potato's, chopped into small cubes
  • 1-1/2 cups frozen baby peas
  • 3-1/2 tbs curry powder
  • 6 sheets puff pastry
  • salt & pepper
  • Sweet'n'sour chilli cucumber sauce
  • 3/4 cup water
  • 3/4 cup rice wine vinegar
  • 3/4 cup caster sugar
  • 1 lebanese cucumber, deseeded and finely chopped
  • 2 dried red chilli’s, seeds removed and finely chopped
  • 1 tsp fresh coriander, finely chopped (optional)

Method

  1. Curry Puffs
  2. Heat oil in pan and add onion, garlic and ginger and cook until onion is soft
  3. Add the beef mince and cook for 5-10 minutes until browned
  4. Add potato and cook for further 5 minutes or until potato softens
  5. Add peas and curry powder and stir for 3 minutes
  6. Remove pan from heat the let mixture cool for approximately 30 minutes
  7. Season with salt and pepper to taste
  8. Cut each sheet of puff pastry into four squares
  9. Brush the edges of each square lightly with water
  10. Using an ice cream scoop, place one scoop of curry mixture into centre of each square
  11. Fold into a triangle and press down edges with a fork to seal
  12. Place triangles onto oven trays lined with baking paper and brush lightly with milk
  13. Bake in 200 degree oven for approximately 20 minutes or until puffed and golden
  14. Remove from oven to wire rack and cool slightly before serving with Sweet'n'Sour Chilli & Cucumber Sauce (method below)
  15. Place water, vinegar and sugar into saucepan and bring to the boil, stirring until sugar dissolves
  16. Boil for 8 minutes, stirring occasionally (liquid will thicken slightly)
  17. Cool in saucepan for 15 minutes
  18. Transfer to a bowl, add cucumber and chilli (and Coriander is using) and refrigerate until chilled

Notes & Tips

Also good using chicken or turkey mince and replacing the curry powder with a Curry Paste (Tikka Masala is my favourite) Preparation time includes 30 minutes for mixture to cool
