Chicken Avocardo & Gnocci


Seared chicken pieces in a creamy avocardo sauce with gnocci pasta

Serves 3 to 4

Ingredients

Method

  1. Dice chicken into cubes,
  2. chop & crush garlic,
  3. deseed & scoop out flesh of avocardos into a bowl, squeeze half a lemon over top of avocardos add salt & pepper,
  4. chop mushrooms & onion.
  5. Fry onions till almost clear, add garlic, cook , remove garlic & onions from pan into a bowl, brown chicken, drain any oil & excess juice, put onions & garlic back into pan with chicken add avocardo, mushrooms & cream, mix a little corn flour paste with a little water add to pan, simmer for 10mins. while that is cooking add goocci to boiling salted water, when cooked, drain & add to chicken sauce mix, serve.

Notes & Tips

Dont burn the garlic & onion, dont leave in oil or juices as it makes the dish greasy.
