Quinoa Salad


Quinoa Salad

Delicious light quinoa salad with basil garlic dressing.

Serves 4

Ingredients

  • 1 x 250 g packet of quinoa
  • 1x advocado
  • ½ cup of chick peas
  • ¼ cup of pinenuts
  • 3 cups of spinich leaves
  • 1 x roma or cherry tomatos
  • 1x regular sized tomato
  • ½ cup of basil
  • 1x clove of garlic
  • 1½ tablespoons of olive oil
  • salt and pepper to taste

Method

  1. Salad:
  2. Rinse the quinoa well, add to boiling water and cook until soft
  3. Add chopped avocado, pinenuts, spinich leaves, chickpeas, roma or cherry tomatos to a salad bowl and mix.
  4. Add cooked quinoa to the salad bowl.
  5. Dressing:
  6. Finely chop basil and garlic. Add juice from one regular sized tomato and oil. Salt and pepper to taste.

Notes & Tips

Add the dressing while the quinoa is warm so the basil and garlic dressing will be fused all throughout the salad.
