I tried something like this in a cafe once and loved it, the cafe shut down so i had to go home and work out what was in it so that i could keep this beautiful dish on the menu!!
Left over bbq chicken works fine and gives a lovely flavour Add more pesto depending on your tastes- I like it to get a bit crunchy on the bottom of the pan. Sauce should "glisten"- there should be enough oil in the pesto and the sundried tomatoes for this but if it appears dry, give it an extra glug of olive oil
