Tuna Mould


Lovely fresh summer dish of rice & tuna requiring very little effort

Serves 4 to 6

Ingredients

  • 2 cups of rice, then cooked & drained
  • Add large tin of tuna in brine or springwater only, drained.
  • 1 chopped green capsicum
  • 1 large jar of mayonnaise
  • Tomato sauce
  • Worchestershire sauce
  • Freshly ground black pepper
  • 1 lemon
  • ¼ cup toasted almond flakes

Method

  1. Cooked the rice & drain
  2. Mix rice, tuna and capsicum together in a bowl
  3. Tip from bowl onto large platter, which preferably has a lip. Mould into a mound with wet hands.
  4. In a separate bowl or jar make a seafood sauce to taste using the mayonnaise, worchestershire sauce, pepper and lemon. Mix well.
  5. Pour sauce over mould
  6. Sprinkle almond flakes

Notes & Tips

For entertaining mould can be made ahead. Place Gladwrap over to prevent drying out. Seafood sauce can also be made ahead but do not add until you are ready to serve. Measures can be changed depending upon numbers of guests.
