Summer Pasta Salad

A lovely pesto, Feta, sundried tomato, pine nut and baby spinach salad.



  • 1.

    Boil pasta as per packet instructions

  • 2.

    Dice up sundried tomato's

  • 3.

    Dice onion really fine

  • 4.

    Slice feta into small cubes

  • 5.

    Rise baby spinach and allow to dry on paper towel

  • 6.

    Place all ingredients into bowl, dispose of paper towel

  • 7.

    In a pan slightly dry fry pine nuts until slightly brown, allow to cool

  • 8.

    Once pasta has been cooked, drain and allow to cool.

  • 9.

    Once pasta cooled stir through the pesto, and slowly add small amounts of other ingredients. Lots of cracked black pepper and your ready to go.


If you don't like pesto you can always use a small amount of good quality olive oil as the dressing. Just enough to make pasta a little moist.
