Bacon and egg pies

Serves 8

Ingredients

  • 1 tablespoon butter/cooking spray
  • 4 bacon rashers, finely chopped/8 shortcut rashers,finely chopped
  • 500g ricotta cheese
  • 2 eggs
  • ¾ cup mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 4 sprigs parsley

Method

  1. cook bacon for 3 minutes over medium heat in fry pan
  2. Combine all ingredients in food processor
  3. Spoon mixture into greased muffin tin
  4. Bake at 180c for 30 minutes

    Of course this would be as quick as one could possibly make a Bacon and Egg Pie. I like how it is simple, basic ingrediants which can easily be flavoured by adding your own blend of herbs. I like how you don't have to make a short pastry. I am not a great fan of too much cheese so I added an extra egg an a very small amount of plain flour to this mixture. Beside loads of cheese, I did like this recipe.
