Roast Sweet Potato Chilli Chips

These delicious roasted sweet potatoes can accompany meat, fish or vegetarian dishes. We love our sweet potatoes; Chinese farmers would cook these over charcoal buried in the earth – something my grandparents did, too. Now the modern Chinese family in China would have an oven, which means they can slow-roast sweet potatoes to perfection!

Serves 2

Ingredients

  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • 1 teaspoon crushed dried chilli flakes or smoked paprika
  • ground black pepper
  • 350g/12oz sweet potatoes, peeled and cut into chips

Method

  1. Preheat the oven to 180ºC/350ºF/gas mark 4.
  2. Place the olive oil, salt, crushed dried chilli flakes and pepper into a roasting tin. Add the sweet potatoes and turn to coat in the seasoned oil, then roast in the oven for 20-30 minutes (depending on the thickness of your chips) and serve immediately.
