Potato And Spinach


The most simple yet delicious way to eat spinach.

Serves 3 to 4

Ingredients

  • Bunch of spinach
  • 3-4 potatoes (waxy potatoes hold their shape better, ie desiree)
  • 1-2 cloves garlic, depending on how garlicy you want it.
  • Good quality olive oil

Method

  1. Wash, drain, remove stalk and cut spinach into strips (approx 4-5 cm wide)
  2. Peel and cut potatoes into even sized cubes.
  3. Finely slice garlic.
  4. Place potatoes and garlic in a pot with lid and cover with water, you may add salt if you wish.
  5. Bring potatoes to the boil, then turn down heat and gently simmer til tender.
  6. Drain off some of the water, leaving a little in the pot with potatoes and garlic.
  7. Place spinah into pot with potatoes and put lid back on,leave for a few minutes, this will cause the spinach to wilt.
  8. Once spinach has wiltted, drizzle with olive oil, (add a little salt, optional) and mix gently.
  9. Serve as a side dish to any meal.
  10. Enjoy!!!!!!
