Prawn and Mango Salad

This is a lovely fresh salad that is quick and easy to prepare.


  • 1 large bag of baby spinach leaves

  • 750 grams of cooked prawns

  • 1 cucumber

  • 100g of snow peas

  • 1 large mango

  • 1 avocado

  • 1/2 punnet of tomatoes (either grape or cherry)

  • OPTIONAL - dressing

  • 2 tablespoons of sweet chilli sauce

  • 2 table spoons of oil (ie. canola)

  • 1 teapoon of finely diced mint leaves


  • 1.

    First wash and drain baby spinach leaves then layer onto a large platter

  • 2.

    Peel and de-vein prawns, layer across spinach leaves

  • 3.

    Julienne cucumber and again, layer

  • 4.

    De-string snow peas, julienne then layer across other ingredients

  • 5.

    Slice mango and avocado into segments and arrange over ingredients

  • 6.

    Finally, add tomatoes

  • 7.

    If preparing optional dressing, mix all ingredients and leave to side of salad in a small serving jug.


If you do not like prawns then you can substitute for bbq chicken which you would shred.
