Baked Layered Potatoes


Sliced poatoes baked with cream and cheese sauce

Serves 4 to 6

Ingredients

  • 4 or 5 large potatoes
  • Small carton of cream
  • 1 teaspoon "vegeta" vegetable stock
  • 2 cups grated matured cheese
  • 1/2 cup milk

Method

  1. Grease a medium sized casserole dish.
  2. Peel and slice potatoe thinly and add to casserole dish don't be too fiussy how it looks this is a rustic family dish.
  3. Cover with gladwrap and microwave on high for approx 5 mins potatoes should be a little soft but still hold there shape.
  4. Combine stock, cream and milk stir to combine add to the potatoes with half the cheese and gently fold thru.
  5. Put remaining cheese on top and finish cooking in the oven till potatoes are cooked and top is nice and brown.

Notes & Tips

My family are vegetarians but cooked chopped bacon would be nice added to this dish. You could cook it completely in oven by adding all ingredients together in dish and cooking in oven. But I prefer using microwave because its quicker and you can still do this dish even if you dont have a lot of time. Use low fat cream, margarine, cheese and milk to make a little healthier!
