Chicken Schnitzel


Chicken coated in a crispy bread crumbs. Great with a salad or in a sandwich.

Serves 4

Ingredients

  • bread crumbs - 3 cups
  • Thinly sliced chicken breast - 400 g
  • eggs - 2
  • Parmesan cheese - .5 cup
  • Olive oil - for shallow frying
  • Basil - hand full
  • salt - to taste

Method

  1. Place the eggs, basil and cheese in a bowl and whisk until light and frothy
  2. Pour the bread crumbs on to a flat dish
  3. Coat the chicken breast in the egg, basil & cheese mixture and then transfer to the bread crumbs
  4. Coat the chicken with bread crumbs and firmly push the crumbs down on to the chicken using your hand
  5. Place the olive in a frying pan and heat
  6. Once the oil is hot, place the chicken in the hot plate and fry each side until golden brown
  7. Place the chicken on a plate covered with an absorbent towel to absorb the excess olive oil
  8. Season with salt.
