Boiled Fruit Cake


Ingredients

Method

  1. place mixed fruit, pineapple, sugar, butter and water in a lge saucpan and place over low heat and bring to boil, simmer for 5 mins.
  2. Remove from heat and allow to cool.
  3. Add 1 well beaten egg and mix well.
  4. Sift in flour and mixed spice and mix well.
  5. Add bi carb and stir well.
  6. Pour into a 20cm well greased cake tin and cook in a slow oven for 2 hours

mix may also be baked as mini cup cakes for 40mins in slow oven, then iced with melted white chocolate This is a very moist fruit cake
